- Boneless chicken thighs - 300 grams
- Basmati rice - 1 cup (200 grams)
- Chicken broth - 2 cups (480 ml)
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - for garnish
- Lemon wedges - for serving
Steps
- Heat olive oil in a large skillet over medium heat. Add diced onion and sauté for 3-4 minutes until translucent.
- Add minced garlic to the skillet and cook for an additional minute until fragrant.
- Season the boneless chicken thighs with cumin, paprika, turmeric, salt, and black pepper, then add them to the skillet. Cook for 5-6 minutes on each side until browned.
- Remove the chicken from the skillet and set aside. In the same skillet, add the basmati rice and toast for 2 minutes, stirring frequently.
- Pour in the chicken broth and bring to a boil. Reduce heat to low, return the chicken to the skillet, and cover. Let it simmer for 20 minutes, or until the rice is cooked and has absorbed the broth.
- Once done, remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and garnish with fresh parsley.
- Serve hot with lemon wedges on the side.
