  • Potatoes - 2 medium (about 300 grams), peeled and cubed
  • Bell pepper - 1 medium, sliced
  • Broccoli florets - 100 grams
  • Garlic - 3 cloves, minced
  • Soy sauce - 3 tablespoons
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Green onions - 2, sliced (for garnish)

Steps

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Add the diced chicken breast, season with salt, black pepper, and paprika, and cook for about 5-7 minutes until browned and cooked through. Remove chicken from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil and the cubed potatoes. Cook for about 10-12 minutes, stirring occasionally, until the potatoes are golden and tender.
  4. Add the minced garlic, sliced bell pepper, and broccoli florets to the skillet. Stir-fry for an additional 5 minutes until the vegetables are vibrant and tender-crisp.
  5. Return the cooked chicken to the skillet and pour in the soy sauce. Stir well to combine and cook for another 2-3 minutes until everything is heated through.
  6. Remove from heat and serve in bowls, garnished with sliced green onions.
