Ingredients

  • Chicken breast - 250 grams
  • Potatoes - 300 grams
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Mayonnaise - 2 tablespoons
  • Dijon mustard - 1 teaspoon

Steps

  1. Start by boiling the potatoes in salted water for about 15-20 minutes, or until fork-tender. Drain and let them cool.
  2. While the potatoes are cooking, season the chicken breast with salt, pepper, and paprika.
  3. In a skillet over medium heat, add 1 tablespoon of olive oil and cook the chicken for about 6-7 minutes per side, or until fully cooked and golden brown. Remove from heat and let it rest for a few minutes.
  4. Once the chicken has cooled slightly, dice it into bite-sized pieces.
  5. In a large bowl, combine the cooled potatoes, diced chicken, minced garlic, chopped parsley, mayonnaise, Dijon mustard, lemon juice, and the remaining tablespoon of olive oil.
  6. Gently toss everything together until well combined. Adjust seasoning with additional salt and pepper if necessary.
  7. Serve chilled or at room temperature.
