Ingredients

  • Arborio rice - 150 grams
  • Halal chicken breast - 200 grams, diced
  • Fresh mushrooms (button or cremini) - 100 grams, sliced
  • Chicken broth - 500 ml
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Butter - 1 tablespoon
  • Parmesan cheese - 30 grams, grated
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a medium saucepan, heat the chicken broth over low heat and keep it warm.
  2. In a large skillet, heat the olive oil and butter over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
  3. Add the minced garlic and sliced mushrooms to the skillet and cook for another 5 minutes until the mushrooms are tender and browned.
