  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Chicken broth - 500 ml
  • Olive oil - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Cilantro - a handful, chopped (for garnish)

Steps

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion, garlic, carrot, and celery. Sauté for about 5 minutes until the vegetables are softened.
  3. Add the diced chicken breast to the pot and cook for another 5-7 minutes until the chicken is browned.
  4. Stir in the cumin, paprika, salt, and black pepper, mixing well to coat the chicken and vegetables.
