Ingredients

  • Chicken breast - 200 grams
  • Green lentils - 100 grams
  • Cucumber - 1 medium, diced
  • Cherry tomatoes - 150 grams, halved
  • Red onion - 1 small, finely chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic - 1 clove, minced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon

Steps

  1. Rinse the lentils under cold water and then cook them in a pot with 400 ml of water. Bring to a boil, then reduce to a simmer for about 15-20 minutes until tender. Drain and set aside.
  2. While the lentils are cooking, season the chicken breast with salt, black pepper, and paprika. Heat 1 tablespoon of olive oil in a skillet over medium heat.
  3. Cook the chicken for about 6-7 minutes on each side or until fully cooked and golden brown. Remove from heat and let it rest for a few minutes before slicing.
  4. In a large bowl, combine the cooked lentils, diced cucumber, cherry tomatoes, red onion, and chopped parsley.
  5. In a small bowl, whisk together the remaining 1 tablespoon of olive oil, lemon juice, and minced garlic. Pour over the salad mixture and toss to combine.
  6. Slice the cooked chicken and place it on top of the lentil salad. Serve immediately.
