- Chicken breast - 200 grams
- Green lentils - 100 grams
- Cucumber - 1 medium, diced
- Cherry tomatoes - 150 grams, halved
- Red onion - 1 small, finely chopped
- Fresh parsley - 2 tablespoons, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Garlic - 1 clove, minced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
Steps
- Rinse the lentils under cold water and then cook them in a pot with 400 ml of water. Bring to a boil, then reduce to a simmer for about 15-20 minutes until tender. Drain and set aside.
- While the lentils are cooking, season the chicken breast with salt, black pepper, and paprika. Heat 1 tablespoon of olive oil in a skillet over medium heat.
- Cook the chicken for about 6-7 minutes on each side or until fully cooked and golden brown. Remove from heat and let it rest for a few minutes before slicing.
- In a large bowl, combine the cooked lentils, diced cucumber, cherry tomatoes, red onion, and chopped parsley.
- In a small bowl, whisk together the remaining 1 tablespoon of olive oil, lemon juice, and minced garlic. Pour over the salad mixture and toss to combine.
- Slice the cooked chicken and place it on top of the lentil salad. Serve immediately.
