- Eggplant - 1 medium, diced
- Red bell pepper - 1, sliced
- Green bell pepper - 1, sliced
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, minced
- Soy sauce - 3 tablespoons
- Oyster sauce - 1 tablespoon
- Sesame oil - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Cornstarch - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - for garnish
- Cooked rice - 2 cups (for serving)
Steps
- In a bowl, combine the diced chicken, soy sauce, oyster sauce, cornstarch, salt, and black pepper. Mix well and let marinate for 10 minutes.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry for about 5-7 minutes, or until cooked through. Remove from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the minced garlic and ginger, and sauté for about 30 seconds until fragrant.
- Add the diced eggplant and stir-fry for 4-5 minutes until it begins to soften. Then, add the sliced red and green bell peppers and continue to cook for an additional 3-4 minutes.
- Return the cooked chicken to the skillet, add the sesame oil, and mix everything together. Cook for another 2 minutes until heated through.
- Serve the stir-fry over cooked rice and garnish with fresh cilantro.
