Ingredients
- Bone-in, skin-on chicken thighs - 400 grams
- Chicken broth - 500 milliliters
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- All-purpose flour - 100 grams
- Baking powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Dried thyme - 1/2 teaspoon
- Milk - 100 milliliters
- Butter - 30 grams
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a large pot, melt the butter over medium heat. Add the diced onion, carrot, celery, and garlic, and sauté until the vegetables are softened, about 5-7 minutes.
- Add the chicken thighs to the pot and season with salt, black pepper, and dried thyme. Pour in the chicken broth and bring to a boil. Reduce the heat and let it simmer for about 25 minutes, until the chicken is cooked through.
- Remove the chicken from the pot and let it cool slightly. Shred the meat into bite-sized pieces, discarding the skin and bones. Return the shredded chicken to the pot.
- In a mixing bowl, combine the all-purpose flour, baking powder, salt, and black pepper. Stir in the milk until a thick dough forms.
- Drop spoonfuls of the dumpling dough into the simmering broth. Cover the pot and cook for an additional 10-15 minutes, or until the dumplings are cooked through and fluffy.
- Garnish with chopped fresh parsley before serving.
