  • Potato - 1 medium (about 150 grams), peeled and diced
  • Carrot - 1 medium (about 70 grams), diced
  • Celery - 1 stalk, diced
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Chicken broth - 500 ml
  • Heavy cream - 100 ml
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Dried thyme - 1 teaspoon
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, and sauté until translucent, about 3-4 minutes.
