Ingredients

  • Halal chicken breast - 250 grams, diced
  • Cauliflower florets - 200 grams
  • Egg noodles - 150 grams
  • Soy sauce - 3 tablespoons
  • Sesame oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Green bell pepper - 1, sliced
  • Carrot - 1 medium, julienned
  • Green onions - 2, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - 1/2 teaspoon (optional)
  • Water - 1 liter

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large pot, bring 1 liter of water to a boil and cook the egg noodles according to package instructions. Drain and set aside.
  3. In a large mixing bowl, toss the cauliflower florets with 1 tablespoon of sesame oil, salt, and black pepper. Spread on a baking sheet and roast in the oven for about 15 minutes until golden and tender.
  4. While the cauliflower is roasting, heat 1 tablespoon of sesame oil in a large skillet over medium heat. Add the diced chicken and cook until browned and fully cooked, about 5-7 minutes.
  5. Add the minced garlic, ginger, sliced green bell pepper, and julienned carrot to the skillet. Stir-fry for another 3-4 minutes until the vegetables are tender.
  6. Stir in the cooked egg noodles, soy sauce, and red pepper flakes (if using). Mix well to combine all ingredients.
  7. Once the cauliflower is done roasting, add it to the skillet and gently toss everything together.
  8. Serve the stir-fry hot, garnished with chopped green onions.
