Ingredients
- Halal chicken breast - 250 grams, diced
- Cauliflower florets - 200 grams
- Egg noodles - 150 grams
- Soy sauce - 3 tablespoons
- Sesame oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Green bell pepper - 1, sliced
- Carrot - 1 medium, julienned
- Green onions - 2, chopped
- Salt - to taste
- Black pepper - to taste
- Red pepper flakes - 1/2 teaspoon (optional)
- Water - 1 liter
Steps
- Preheat the oven to 200°C (400°F).
- In a large pot, bring 1 liter of water to a boil and cook the egg noodles according to package instructions. Drain and set aside.
- In a large mixing bowl, toss the cauliflower florets with 1 tablespoon of sesame oil, salt, and black pepper. Spread on a baking sheet and roast in the oven for about 15 minutes until golden and tender.
- While the cauliflower is roasting, heat 1 tablespoon of sesame oil in a large skillet over medium heat. Add the diced chicken and cook until browned and fully cooked, about 5-7 minutes.
- Add the minced garlic, ginger, sliced green bell pepper, and julienned carrot to the skillet. Stir-fry for another 3-4 minutes until the vegetables are tender.
- Stir in the cooked egg noodles, soy sauce, and red pepper flakes (if using). Mix well to combine all ingredients.
- Once the cauliflower is done roasting, add it to the skillet and gently toss everything together.
- Serve the stir-fry hot, garnished with chopped green onions.
