Ingredients

  • Chicken breast - 300 grams, sliced
  • Cauliflower - 200 grams, cut into florets
  • Bell pepper - 1 medium, sliced
  • Onion - 1 medium, sliced
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Soy sauce - 3 tablespoons
  • Honey - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Red pepper flakes - 1/2 teaspoon (optional)
  • Green onions - 2, chopped (for garnish)

Steps

  1. Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.
  2. Add the sliced chicken breast to the skillet, season with salt and black pepper, and cook for about 5-7 minutes until browned and cooked through. Remove chicken from the skillet and set aside.
  3. In the same skillet, add another tablespoon of olive oil, then add minced garlic and ginger. Sauté for about 30 seconds until fragrant.
  4. Add the cauliflower florets and sliced onion to the skillet, and stir-fry for about 5 minutes until the vegetables begin to soften.
  5. Add the sliced bell pepper and continue to stir-fry for another 3-4 minutes until all vegetables are tender-crisp.
  6. Return the cooked chicken to the skillet. In a small bowl, mix together the soy sauce and honey, then pour this sauce over the chicken and vegetables.
  7. If desired, add red pepper flakes for extra heat. Stir well to combine and cook for an additional 2 minutes until everything is heated through.
  8. Remove from heat, garnish with chopped green onions, and serve immediately.
