- Cauliflower - 200 grams, cut into florets
- Bell pepper - 1 medium, sliced
- Onion - 1 medium, sliced
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, minced
- Soy sauce - 3 tablespoons
- Honey - 1 tablespoon
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Red pepper flakes - 1/2 teaspoon (optional)
- Green onions - 2, chopped (for garnish)
Steps
- Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.
- Add the sliced chicken breast to the skillet, season with salt and black pepper, and cook for about 5-7 minutes until browned and cooked through. Remove chicken from the skillet and set aside.
- In the same skillet, add another tablespoon of olive oil, then add minced garlic and ginger. Sauté for about 30 seconds until fragrant.
- Add the cauliflower florets and sliced onion to the skillet, and stir-fry for about 5 minutes until the vegetables begin to soften.
- Add the sliced bell pepper and continue to stir-fry for another 3-4 minutes until all vegetables are tender-crisp.
- Return the cooked chicken to the skillet. In a small bowl, mix together the soy sauce and honey, then pour this sauce over the chicken and vegetables.
- If desired, add red pepper flakes for extra heat. Stir well to combine and cook for an additional 2 minutes until everything is heated through.
- Remove from heat, garnish with chopped green onions, and serve immediately.
