- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped (for garnish)
- Lemon - 1, juiced
Steps
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
- Add the minced garlic and cook for an additional 1 minute until fragrant.
- Increase the heat to medium-high and add the cubed chicken to the skillet. Season with cumin, coriander, paprika, turmeric, salt, and black pepper. Cook for about 6-8 minutes until the chicken is browned and cooked through.
- While the chicken is cooking, prepare the cauliflower rice. Remove the leaves and stem from the cauliflower, then cut it into florets. Using a food processor, pulse the florets until they resemble rice grains. Alternatively, you can grate the cauliflower using a box grater.
- Once the chicken is cooked, remove it from the skillet and set aside. In the same skillet, add the remaining tablespoon of olive oil and the riced cauliflower. Sauté for about 5-7 minutes until the cauliflower is tender but not mushy. Season with salt and pepper to taste.
- Return the cooked chicken to the skillet with the cauliflower rice. Stir in the lemon juice and mix well to combine.
