- Halal chicken breast - 300 grams, diced
- Cauliflower florets - 200 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 medium, sliced
- Bell pepper - 1 medium, sliced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Water - 100 ml
Steps
- Preheat the oven to 200°C (400°F).
- In a large bowl, toss the cauliflower florets with 1 tablespoon of olive oil, salt, and pepper. Spread them on a baking sheet and roast in the oven for 15 minutes.
- In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the sliced onion and garlic, sautéing until softened, about 3 minutes.
- Add the diced chicken to the skillet and cook until browned on all sides, about 5-7 minutes.
- Stir in the sliced bell pepper, cumin, paprika, turmeric, and water. Cook for an additional 5 minutes until the chicken is cooked through.
- Once the cauliflower is done roasting, add it to the skillet with the chicken mixture. Stir well to combine all ingredients.
- Sprinkle chopped parsley and drizzle with lemon juice before serving.
