  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro, chopped - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Water - 0.5 liters

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large mixing bowl, combine the olive oil, minced garlic, cumin, coriander, paprika, turmeric, salt, and black pepper.
  3. Add the chicken thighs to the bowl and toss to coat evenly with the spice mixture.
  4. In a separate bowl, toss the cauliflower florets with a tablespoon of olive oil and a pinch of salt.
  5. Spread the cauliflower on a baking sheet and roast in the preheated oven for 15 minutes.
  6. While the cauliflower is roasting, heat a skillet over medium heat and add the marinated chicken thighs.
  7. Cook the chicken for about 6-7 minutes on each side or until fully cooked and golden brown.
  8. Remove the cauliflower from the oven, and mix it with the cooked chicken in the skillet.
  9. Drizzle with lemon juice and garnish with fresh cilantro before serving.
