- Chicken breast - 200 grams
- Brussels sprouts - 200 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Tahini - 1 tablespoon
- Lemon juice - 2 tablespoons
- Honey - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the oven to 200°C (400°F).
- Trim the ends of the Brussels sprouts and cut them in half. In a bowl, toss Brussels sprouts with 1 tablespoon of olive oil, minced garlic, salt, and black pepper.
- Spread the Brussels sprouts on a baking sheet and roast in the preheated oven for 20 minutes, or until they are golden and tender.
- While the Brussels sprouts are roasting, season the chicken breast with salt and pepper. In a skillet, heat 1 tablespoon of olive oil over medium heat.
- Cook the chicken breast for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center. Remove from the skillet and let it rest for a few minutes before slicing.
- In a small bowl, whisk together tahini, lemon juice, and honey to create the dressing.
- Once the Brussels sprouts are done roasting, combine them in a bowl with the sliced chicken and drizzle the tahini dressing over the top.
- Garnish with chopped parsley and serve immediately.
