Ingredients
- Chicken breast - 300 grams
- Black beans (canned) - 1 cup (240 grams), drained and rinsed
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Garlic powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Taco seasoning - 1 tablespoon
- Corn tortillas - 4 pieces
- Lettuce (shredded) - 1 cup
- Tomato (diced) - 1 medium
- Avocado (sliced) - 1 medium
- Lime - 1, cut into wedges
- Cilantro (chopped) - 2 tablespoons
Steps
- In a bowl, mix olive oil, ground cumin, paprika, garlic powder, salt, black pepper, and taco seasoning. Add the chicken breast and coat it well with the marinade. Let it marinate for 10 minutes.
- While the chicken is marinating, prepare the toppings: shred the lettuce, dice the tomato, slice the avocado, and chop the cilantro.
- Heat a skillet over medium heat. Add the marinated chicken and cook for about 6-7 minutes on each side or until fully cooked and no longer pink in the center. Remove from heat and let it rest for a few minutes before slicing.
- In the same skillet, warm the corn tortillas for about 30 seconds on each side until pliable.
- To assemble the tacos, place sliced chicken on each tortilla, add a spoonful of black beans, and top with shredded lettuce, diced tomato, avocado slices, and chopped cilantro.
- Serve with lime wedges on the side for squeezing over the tacos.
