Ingredients
- Chicken breast - 250 grams
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Garlic powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Avocado - 1 medium, diced
- Cherry tomatoes - 200 grams, halved
- Cucumber - 1 medium, diced
- Red onion - 1/4 medium, thinly sliced
- Fresh cilantro - 2 tablespoons, chopped
- Mixed salad greens - 100 grams
- Feta cheese - 50 grams, crumbled (optional)
Steps
- In a bowl, mix olive oil, lemon juice, garlic powder, paprika, salt, and black pepper to create a marinade.
- Add the chicken breast to the marinade, coating it well. Let it marinate for at least 10 minutes.
- While the chicken marinates, prepare the salad ingredients: dice the avocado, halve the cherry tomatoes, dice the cucumber, and thinly slice the red onion.
- Heat a grill pan or skillet over medium-high heat. Cook the marinated chicken for about 6-7 minutes per side or until fully cooked and golden brown.
- Once cooked, remove the chicken from the heat and let it rest for a few minutes before slicing it into strips.
- In a large bowl, combine the mixed salad greens, avocado, cherry tomatoes, cucumber, red onion, and chopped cilantro.
- Top the salad with the sliced chicken and crumbled feta cheese if desired. Drizzle with any remaining marinade if you like.
- Serve immediately and enjoy your Halal Chicken and Avocado Salad!
