Ingredients

  • Chicken thighs - 300 grams
  • Soy sauce - 60 ml
  • White vinegar - 60 ml
  • Garlic - 4 cloves, minced
  • Bay leaves - 2
  • Black peppercorns - 1 teaspoon
  • Onion - 1 medium, sliced
  • Vegetable oil - 1 tablespoon
  • Water - 120 ml
  • Sugar - 1 teaspoon
  • Green onions - 2, chopped (for garnish)

Steps

  1. In a bowl, combine the soy sauce, white vinegar, minced garlic, black peppercorns, and sugar. Add the chicken thighs and marinate for at least 15 minutes.
  2. In a large skillet, heat the vegetable oil over medium heat. Add the sliced onion and sauté until translucent.
  3. Remove the chicken from the marinade (reserve the marinade) and add it to the skillet. Brown the chicken on all sides for about 5 minutes.
  4. Pour the reserved marinade and water into the skillet. Add the bay leaves and bring to a simmer.
  5. Cover the skillet and cook for 25 minutes, stirring occasionally until the chicken is tender and cooked through.
  6. Remove the lid and let the sauce reduce for another 5 minutes if you prefer a thicker sauce.
  7. Serve the chicken adobo over rice, garnished with chopped green onions.
