- Chicken thighs - 300 grams
- Soy sauce - 60 ml
- White vinegar - 60 ml
- Garlic - 4 cloves, minced
- Bay leaves - 2
- Black peppercorns - 1 teaspoon
- Onion - 1 medium, sliced
- Vegetable oil - 1 tablespoon
- Water - 120 ml
- Sugar - 1 teaspoon
- Green onions - 2, chopped (for garnish)
Steps
- In a bowl, combine the soy sauce, white vinegar, minced garlic, black peppercorns, and sugar. Add the chicken thighs and marinate for at least 15 minutes.
- In a large skillet, heat the vegetable oil over medium heat. Add the sliced onion and sauté until translucent.
- Remove the chicken from the marinade (reserve the marinade) and add it to the skillet. Brown the chicken on all sides for about 5 minutes.
- Pour the reserved marinade and water into the skillet. Add the bay leaves and bring to a simmer.
- Cover the skillet and cook for 25 minutes, stirring occasionally until the chicken is tender and cooked through.
- Remove the lid and let the sauce reduce for another 5 minutes if you prefer a thicker sauce.
- Serve the chicken adobo over rice, garnished with chopped green onions.
