- turkey sausage (halal) - 150 grams
- small onion (diced) - 1
- red bell pepper (diced) - 1/2
- olive oil - 1 tablespoon
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon
- taco seasoning - 1 teaspoon
- small flour tortillas - 4
- shredded cheese (cheddar or Mexican blend) - 100 grams
- fresh cilantro (chopped) - 2 tablespoons
- avocado (sliced) - 1
- sour cream - 2 tablespoons
Steps
- In a skillet, heat olive oil over medium heat. Add diced onion and red bell pepper, sautéing until softened, about 3-4 minutes.
- Remove the vegetables from the skillet and set aside. In the same skillet, add the turkey sausage, breaking it up with a spatula, and cook until browned and fully cooked, about 5-7 minutes.
- While the sausage cooks, whisk together the eggs, salt, black pepper, and taco seasoning in a bowl.
- Once the sausage is cooked, push it to one side of the skillet and pour the egg mixture into the other side. Scramble the eggs gently until just set, about 3-4 minutes, mixing with the sausage and vegetables.
- Warm the tortillas in a separate pan or microwave for about 30 seconds until pliable.
- To assemble, place a generous portion of the egg and sausage mixture onto each tortilla. Top with shredded cheese, chopped cilantro, avocado slices, and a dollop of sour cream.
- Fold the tortillas in half and serve immediately.
