Ingredients

  • large eggs - 4
  • turkey sausage (halal) - 150 grams
  • small onion (diced) - 1
  • red bell pepper (diced) - 1/2
  • olive oil - 1 tablespoon
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • taco seasoning - 1 teaspoon
  • small flour tortillas - 4
  • shredded cheese (cheddar or Mexican blend) - 100 grams
  • fresh cilantro (chopped) - 2 tablespoons
  • avocado (sliced) - 1
  • sour cream - 2 tablespoons

Steps

  1. In a skillet, heat olive oil over medium heat. Add diced onion and red bell pepper, sautéing until softened, about 3-4 minutes.
  2. Remove the vegetables from the skillet and set aside. In the same skillet, add the turkey sausage, breaking it up with a spatula, and cook until browned and fully cooked, about 5-7 minutes.
  3. While the sausage cooks, whisk together the eggs, salt, black pepper, and taco seasoning in a bowl.
  4. Once the sausage is cooked, push it to one side of the skillet and pour the egg mixture into the other side. Scramble the eggs gently until just set, about 3-4 minutes, mixing with the sausage and vegetables.
  5. Warm the tortillas in a separate pan or microwave for about 30 seconds until pliable.
  6. To assemble, place a generous portion of the egg and sausage mixture onto each tortilla. Top with shredded cheese, chopped cilantro, avocado slices, and a dollop of sour cream.
