Ingredients

  • Halal breakfast sausage - 150 grams
  • Large eggs - 4
  • Cheddar cheese, shredded - 100 grams
  • Spinach, fresh - 50 grams
  • Flour tortillas - 2 large
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Salsa - 100 grams (for serving)

Steps

  1. In a skillet over medium heat, add the olive oil and cook the halal breakfast sausage until browned and fully cooked, about 5-7 minutes. Remove from the skillet and set aside.
  2. In the same skillet, crack the eggs into the pan, add salt and black pepper, and scramble until fully cooked, about 3-4 minutes. Stir in the fresh spinach until wilted, then mix in the cooked sausage.
  3. Lay one tortilla flat on a clean surface. Spread half of the egg mixture evenly over one half of the tortilla, then sprinkle half of the shredded cheddar cheese on top.
  4. Fold the tortilla in half to cover the filling. Repeat the process with the second tortilla and remaining ingredients.
  5. In the skillet, cook each quesadilla over medium heat for about 3-4 minutes on each side, or until golden brown and crispy. Remove from heat and let cool for a minute before slicing into wedges.
  6. Serve warm with salsa on the side.
