- Halal breakfast sausage - 150 grams
- Large eggs - 4
- Cheddar cheese, shredded - 100 grams
- Spinach, fresh - 50 grams
- Flour tortillas - 2 large
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Salsa - 100 grams (for serving)
Steps
- In a skillet over medium heat, add the olive oil and cook the halal breakfast sausage until browned and fully cooked, about 5-7 minutes. Remove from the skillet and set aside.
- In the same skillet, crack the eggs into the pan, add salt and black pepper, and scramble until fully cooked, about 3-4 minutes. Stir in the fresh spinach until wilted, then mix in the cooked sausage.
- Lay one tortilla flat on a clean surface. Spread half of the egg mixture evenly over one half of the tortilla, then sprinkle half of the shredded cheddar cheese on top.
- Fold the tortilla in half to cover the filling. Repeat the process with the second tortilla and remaining ingredients.
- In the skillet, cook each quesadilla over medium heat for about 3-4 minutes on each side, or until golden brown and crispy. Remove from heat and let cool for a minute before slicing into wedges.
- Serve warm with salsa on the side.
