Ingredients

  • 2 medium potatoes - diced (about 300g)
  • 2 halal chicken sausages - sliced (about 200g)
  • 1 red bell pepper - diced (about 150g)
  • 1 small onion - diced (about 100g)
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Add the diced potatoes to the skillet and season with salt, black pepper, smoked paprika, garlic powder, and cumin.
  3. Cook the potatoes for about 10-12 minutes, stirring occasionally, until they are golden brown and tender.
  4. In another skillet, heat the remaining tablespoon of olive oil over medium heat.
  5. Add the sliced halal chicken sausages to the skillet and cook for about 5 minutes until browned.
  6. Add the diced onion and red bell pepper to the sausage and sauté for an additional 5-7 minutes until the vegetables are soft.
  7. Combine the cooked sausage and vegetable mixture with the hash browns in the first skillet, mixing well to combine.
  8. Cook everything together for an additional 2-3 minutes to heat through.
  9. Garnish with fresh parsley before serving.
