Ingredients

  • All-purpose flour - 1 1/2 cups
  • Baking powder - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Unsalted butter - 1/4 cup (cold, cubed)
  • Milk - 2/3 cup
  • Halal sausage (ground) - 200 grams
  • Onion - 1 small (finely chopped)
  • Garlic - 2 cloves (minced)
  • Black pepper - 1 teaspoon
  • Red pepper flakes - 1/4 teaspoon (optional)
  • Chicken or vegetable broth - 1 cup
  • Heavy cream - 1/2 cup
  • Parsley - for garnish (optional)

Steps

  1. Preheat your oven to 220°C (425°F).
  2. In a large bowl, mix the flour, baking powder, and salt together.
  3. Add the cold, cubed butter to the flour mixture and use a pastry cutter or your fingers to blend until it resembles coarse crumbs.
  4. Pour in the milk and stir until just combined. Do not overmix.
  5. Turn the dough onto a floured surface and gently knead it 3-4 times until it comes together. Pat it into a 1-inch thick rectangle.
  6. Cut out biscuits using a round cutter or glass, and place them on a baking sheet lined with parchment paper.
  7. Bake the biscuits in the preheated oven for 12-15 minutes until golden brown.
  8. While the biscuits are baking, prepare the gravy. In a skillet over medium heat, cook the halal sausage until browned, breaking it apart with a spatula.
  9. Add the chopped onion and minced garlic to the skillet and sauté until the onion is translucent.
  10. Stir in the black pepper and red pepper flakes (if using), then sprinkle in the flour and cook for 1-2 minutes.
  11. Gradually whisk in the broth, stirring continuously until the mixture thickens.
  12. Lower the heat and stir in the heavy cream. Let the gravy simmer for 5 minutes, adjusting seasoning if needed.
  13. Serve the biscuits warm, topped generously with the sausage gravy and garnished with parsley if desired.
