- Basmati rice - 200 grams
- Chicken thighs (boneless, skinless) - 250 grams
- Onion (thinly sliced) - 1 medium
- Garlic (minced) - 3 cloves
- Ginger (grated) - 1 inch piece
- Tomato (chopped) - 1 medium
- Yogurt - 100 grams
- Biryani spice mix - 2 tablespoons
- Fresh cilantro (chopped) - 2 tablespoons
- Fresh mint leaves (chopped) - 2 tablespoons
- Saffron strands - a pinch
- Water - 500 ml
- Cooking oil - 2 tablespoons
- Salt - to taste
- Lemon juice - 1 tablespoon
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a bowl, marinate the chicken thighs with yogurt, biryani spice mix, lemon juice, salt, garlic, and ginger. Let it sit for at least 15 minutes.
- Heat oil in a large pot over medium heat. Add the sliced onions and sauté until golden brown.
- Add the marinated chicken to the pot and cook until the chicken is browned and cooked through, about 10-12 minutes.
- Stir in the chopped tomatoes, fresh cilantro, and mint leaves. Cook for another 5 minutes until the tomatoes soften.
- In a separate pot, bring 500 ml of water to a boil. Add the soaked and drained rice, and cook until it's 70% done. Drain the rice and set aside.
- Layer the partially cooked rice over the chicken mixture in the pot. Sprinkle the saffron strands over the top.
- Cover the pot tightly with a lid and reduce the heat to low. Cook for an additional 15 minutes, allowing the flavors to meld and the rice to finish cooking.
- Remove from heat and let it sit covered for 5 minutes before serving. Fluff the biryani gently with a fork and serve hot.
