Ingredients

  • Basmati rice - 200 grams
  • Chicken thighs (boneless, skinless) - 250 grams
  • Onion (thinly sliced) - 1 medium
  • Garlic (minced) - 3 cloves
  • Ginger (grated) - 1 inch piece
  • Tomato (chopped) - 1 medium
  • Yogurt - 100 grams
  • Biryani spice mix - 2 tablespoons
  • Fresh cilantro (chopped) - 2 tablespoons
  • Fresh mint leaves (chopped) - 2 tablespoons
  • Saffron strands - a pinch
  • Water - 500 ml
  • Cooking oil - 2 tablespoons
  • Salt - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a bowl, marinate the chicken thighs with yogurt, biryani spice mix, lemon juice, salt, garlic, and ginger. Let it sit for at least 15 minutes.
  3. Heat oil in a large pot over medium heat. Add the sliced onions and sauté until golden brown.
  4. Add the marinated chicken to the pot and cook until the chicken is browned and cooked through, about 10-12 minutes.
  5. Stir in the chopped tomatoes, fresh cilantro, and mint leaves. Cook for another 5 minutes until the tomatoes soften.
  6. In a separate pot, bring 500 ml of water to a boil. Add the soaked and drained rice, and cook until it's 70% done. Drain the rice and set aside.
  7. Layer the partially cooked rice over the chicken mixture in the pot. Sprinkle the saffron strands over the top.
  8. Cover the pot tightly with a lid and reduce the heat to low. Cook for an additional 15 minutes, allowing the flavors to meld and the rice to finish cooking.
  9. Remove from heat and let it sit covered for 5 minutes before serving. Fluff the biryani gently with a fork and serve hot.
