Ingredients

  • Ground halal beef - 250 grams
  • Corn tortillas - 4 pieces
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Shredded cheddar cheese - 100 grams
  • Enchilada sauce - 200 ml
  • Fresh cilantro - for garnish
  • Sour cream - for serving (optional)

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a skillet, heat olive oil over medium heat and sauté the chopped onion until translucent, about 3-4 minutes.
  3. Add minced garlic to the skillet and cook for another minute until fragrant.
  4. Add the ground halal beef, cumin, chili powder, salt, and pepper. Cook until the beef is browned and cooked through, about 5-7 minutes.
  5. Remove the skillet from heat and stir in half of the shredded cheddar cheese.
  6. In a baking dish, spread a thin layer of enchilada sauce on the bottom.
  7. Warm the corn tortillas in a dry skillet for about 30 seconds on each side to make them pliable.
  8. Fill each tortilla with a portion of the beef mixture, roll them up, and place them seam-side down in the baking dish.
  9. Pour the remaining enchilada sauce over the rolled tortillas and sprinkle the rest of the cheddar cheese on top.
  10. Cover the baking dish with aluminum foil and bake for 15 minutes. Remove the foil and bake for an additional 5-10 minutes until the cheese is bubbly and golden.
  11. Garnish with fresh cilantro and serve with sour cream if desired.
