- Ground halal beef - 250 grams
- Corn tortillas - 4 pieces
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Shredded cheddar cheese - 100 grams
- Enchilada sauce - 200 ml
- Fresh cilantro - for garnish
- Sour cream - for serving (optional)
Steps
- Preheat your oven to 180°C (350°F).
- In a skillet, heat olive oil over medium heat and sauté the chopped onion until translucent, about 3-4 minutes.
- Add minced garlic to the skillet and cook for another minute until fragrant.
- Add the ground halal beef, cumin, chili powder, salt, and pepper. Cook until the beef is browned and cooked through, about 5-7 minutes.
- Remove the skillet from heat and stir in half of the shredded cheddar cheese.
- In a baking dish, spread a thin layer of enchilada sauce on the bottom.
- Warm the corn tortillas in a dry skillet for about 30 seconds on each side to make them pliable.
- Fill each tortilla with a portion of the beef mixture, roll them up, and place them seam-side down in the baking dish.
- Pour the remaining enchilada sauce over the rolled tortillas and sprinkle the rest of the cheddar cheese on top.
- Cover the baking dish with aluminum foil and bake for 15 minutes. Remove the foil and bake for an additional 5-10 minutes until the cheese is bubbly and golden.
- Garnish with fresh cilantro and serve with sour cream if desired.
