  • Cooked rice - 150 grams
  • Cheddar cheese - 100 grams, shredded
  • Red bell pepper - 1, diced
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lettuce - 1 cup, shredded
  • Sour cream - 4 tablespoons
  • Salsa - 4 tablespoons

Steps

  1. In a skillet, heat olive oil over medium heat. Add diced onion and garlic, sautéing until softened, about 3-4 minutes.
  2. Add the ground halal beef to the skillet, breaking it apart with a spoon. Cook until browned, about 5-6 minutes.
  3. Stir in cumin, paprika, salt, and black pepper. Mix well and cook for an additional 2 minutes.
  4. Add the diced red bell pepper and black beans to the beef mixture, cooking for another 3-4 minutes until the bell pepper is tender.
  5. Warm the tortillas in a separate skillet or microwave for a few seconds until pliable.
