- 2 medium zucchinis
- 250 grams ground halal beef

- 1/4 cup diced bell pepper

- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- Salt - to taste
- Black pepper - to taste
- 1/4 cup shredded mozzarella cheese
- Fresh parsley - for garnish
Steps
- Preheat the oven to 190°C (375°F).
- Cut the zucchinis in half lengthwise and scoop out the seeds to create boats.
- In a skillet over medium heat, sauté the diced onion, bell pepper, and garlic until softened, about 3-4 minutes.
- Add the ground halal beef to the skillet and cook until browned, breaking it up as it cooks, about 5-7 minutes.
- Stir in the smoked paprika, cumin, salt, and black pepper, mixing well.
- Add the barbecue sauce to the beef mixture and stir until combined. Remove from heat.
- Place the zucchini boats on a baking sheet and fill each with the beef mixture.
- Sprinkle shredded mozzarella cheese on top of each stuffed zucchini.
