Ingredients

  • 2 medium zucchinis
  • 250 grams ground halal beef
  • 1/2 cup barbecue sauce
  • 1/4 cup diced onion
  • 1/4 cup diced bell pepper
  • 1 clove garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • Salt - to taste
  • Black pepper - to taste
  • 1/4 cup shredded mozzarella cheese
  • Fresh parsley - for garnish

Steps

  1. Preheat the oven to 190°C (375°F).
  2. Cut the zucchinis in half lengthwise and scoop out the seeds to create boats.
  3. In a skillet over medium heat, sauté the diced onion, bell pepper, and garlic until softened, about 3-4 minutes.
  4. Add the ground halal beef to the skillet and cook until browned, breaking it up as it cooks, about 5-7 minutes.
  5. Stir in the smoked paprika, cumin, salt, and black pepper, mixing well.
  6. Add the barbecue sauce to the beef mixture and stir until combined. Remove from heat.
  7. Place the zucchini boats on a baking sheet and fill each with the beef mixture.
  8. Sprinkle shredded mozzarella cheese on top of each stuffed zucchini.
  9. Bake in the preheated oven for 20-25 minutes, until the zucchini is tender and the cheese is melted and bubbly.
