Ingredients
- 2 large bell peppers - any color
- 200 grams ground halal beef
- 100 grams cooked rice
- 50 grams onion - finely chopped
- 2 cloves garlic - minced
- 50 grams BBQ sauce
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- Salt - to taste
- Black pepper - to taste
- 1 tablespoon olive oil
- 30 grams shredded cheese (optional)
- Fresh parsley - for garnish
Steps
- Preheat your oven to 180°C (350°F).
- Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
- In a skillet, heat olive oil over medium heat and add the chopped onion and minced garlic. Sauté until the onion is translucent.
- Add the ground halal beef to the skillet and cook until browned, breaking it apart with a spatula.
- Stir in the cooked rice, BBQ sauce, smoked paprika, cumin, salt, and pepper. Mix well and cook for another 2-3 minutes.
- Stuff the prepared bell peppers with the beef and rice mixture, pressing down gently to pack them in.
- Place the stuffed peppers upright in a baking dish. If using, sprinkle shredded cheese on top of each pepper.
- Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the cheese is bubbly.
- Garnish with fresh parsley before serving.
