Ingredients

  • Portobello mushrooms - 4 large
  • Ground halal beef - 200 grams
  • BBQ sauce - 50 ml
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1/2, finely chopped
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cheddar cheese - 50 grams, shredded
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Clean the Portobello mushrooms and remove the stems, setting them aside for later.
  3. In a skillet over medium heat, add olive oil and sauté the chopped onions and garlic until translucent, about 3-4 minutes.
  4. Add the ground halal beef to the skillet and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  5. Stir in the chopped red bell pepper, cooked mushroom stems, BBQ sauce, salt, and black pepper. Cook for an additional 2-3 minutes until everything is well combined and heated through.
  6. Remove the skillet from heat and stir in the shredded cheddar cheese and chopped parsley until melted and mixed well.
  7. Stuff each Portobello mushroom cap with the beef mixture, pressing down gently to pack it in.
  8. Place the stuffed mushrooms on a baking tray and bake in the preheated oven for 15-20 minutes, or until the mushrooms are tender and the tops are slightly golden.
  9. Remove from the oven, let cool for a few minutes, then serve warm.
