- Halal grilled chicken breast - 200 grams
- BBQ sauce - 100 grams
- Shredded mozzarella cheese - 100 grams
- Shredded cheddar cheese - 50 grams
- Flour tortillas - 2 large (approximately 25 cm diameter)
- Red onion - 50 grams, thinly sliced
- Bell pepper (any color) - 50 grams, thinly sliced
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish (optional)
Steps
- Preheat a non-stick skillet over medium heat.
- In a bowl, mix the grilled chicken with BBQ sauce until well coated.
- Place one flour tortilla in the skillet and sprinkle half of the mozzarella and cheddar cheese evenly over it.
- Layer half of the BBQ chicken mixture, red onion slices, and bell pepper slices on top of the cheese.
- Top with the remaining cheese and cover with the second tortilla.
- Cook for about 3-4 minutes until the bottom tortilla is golden brown and the cheese begins to melt.
- Carefully flip the quesadilla using a large spatula and cook for another 3-4 minutes on the other side until golden brown and crispy.
- Once done, remove from the skillet, slice into wedges, and garnish with fresh cilantro if desired.
