Ingredients

  • Halal grilled chicken breast - 200 grams
  • BBQ sauce - 100 grams
  • Shredded mozzarella cheese - 100 grams
  • Shredded cheddar cheese - 50 grams
  • Flour tortillas - 2 large (approximately 25 cm diameter)
  • Red onion - 50 grams, thinly sliced
  • Bell pepper (any color) - 50 grams, thinly sliced
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish (optional)

Steps

  1. Preheat a non-stick skillet over medium heat.
  2. In a bowl, mix the grilled chicken with BBQ sauce until well coated.
  3. Place one flour tortilla in the skillet and sprinkle half of the mozzarella and cheddar cheese evenly over it.
  4. Layer half of the BBQ chicken mixture, red onion slices, and bell pepper slices on top of the cheese.
  5. Top with the remaining cheese and cover with the second tortilla.
  6. Cook for about 3-4 minutes until the bottom tortilla is golden brown and the cheese begins to melt.
  7. Carefully flip the quesadilla using a large spatula and cook for another 3-4 minutes on the other side until golden brown and crispy.
  8. Once done, remove from the skillet, slice into wedges, and garnish with fresh cilantro if desired.
