- Plain yogurt - 100g
- Tahini - 1 tablespoon
- Water - 1-2 tablespoons (to thin yogurt sauce)
- Pine nuts - 2 tablespoons (optional, for garnish)
Steps
- Preheat your grill or grill pan to medium-high heat.
- Slice the eggplant into 1/2 inch thick rounds and place them in a large bowl.
- In a small bowl, whisk together olive oil, garlic powder, paprika, cumin, salt, black pepper, and lemon juice.
- Pour the marinade over the eggplant slices, tossing to coat evenly. Let it marinate for at least 15 minutes.
- While the eggplant is marinating, prepare the yogurt sauce by mixing plain yogurt, tahini, and enough water to achieve a smooth consistency. Season with salt to taste.
- Grill the marinated eggplant slices for about 4-5 minutes on each side, or until they are tender and have nice grill marks.
