  • Olive oil - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Corn tortillas - 4 pieces
  • Red cabbage (shredded) - 100 grams
  • Fresh cilantro (chopped) - 2 tablespoons
  • Lime - 1 (cut into wedges)
  • Avocado (sliced) - 1 small

Steps

  1. In a bowl, mix the BBQ sauce, olive oil, ground cumin, smoked paprika, garlic powder, salt, and black pepper.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 15 minutes.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Remove the chicken from the marinade and grill for about 6-7 minutes per side, or until fully cooked (internal temperature should reach 75°C/165°F).
  5. Once cooked, let the chicken rest for a few minutes before slicing it into strips.
  6. Warm the corn tortillas on the grill for about 30 seconds on each side.
  7. Assemble the tacos by placing sliced chicken in the tortillas, then top with shredded red cabbage, chopped cilantro, and avocado slices.
  8. Serve with lime wedges on the side for squeezing over the tacos.
