Ingredients

  • Boneless, skinless chicken breasts - 300 grams
  • BBQ sauce (Halal) - 100 ml
  • Olive oil - 2 tablespoons
  • Mixed salad greens (lettuce, spinach, arugula) - 150 grams
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 1 medium, diced
  • Red onion - 1/4 medium, thinly sliced
  • Feta cheese - 50 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped
  • Black pepper - to taste
  • Salt - to taste

Steps

  1. In a bowl, combine the chicken breasts and BBQ sauce, ensuring the chicken is well coated. Let it marinate for at least 15 minutes.
  2. Heat 1 tablespoon of olive oil in a grill pan over medium heat. Add the marinated chicken breasts and cook for about 5-7 minutes on each side, or until fully cooked and internal temperature reaches 75°C.
  3. Once cooked, remove the chicken from the pan and let it rest for 5 minutes before slicing it into strips.
  4. In a large salad bowl, combine the mixed salad greens, cherry tomatoes, cucumber, red onion, and feta cheese.
  5. Add the sliced chicken on top of the salad. Drizzle with the remaining olive oil and season with salt and black pepper to taste.
  6. Sprinkle fresh parsley over the salad before serving.
