Ingredients

  • Long-grain white rice - 1 cup
  • Dried black mushrooms (Djon Djon) - 2 tablespoons
  • Water - 2 cups
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Bell pepper - 1/2, finely chopped
  • Carrot - 1 small, diced
  • Thyme - 1 teaspoon, dried
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Green onions - 2, sliced (for garnish)

Steps

  1. In a small bowl, soak the dried black mushrooms in 1 cup of hot water for about 15 minutes to rehydrate. Strain the mushrooms, reserving the soaking liquid, and chop the mushrooms finely.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion, garlic, bell pepper, and carrot. Sauté for about 5 minutes until the vegetables are softened.
  3. Add the chopped mushrooms to the saucepan and cook for another 2 minutes, stirring occasionally.
  4. Stir in the rice, thyme, salt, and black pepper, ensuring the rice is well-coated with the oil and mixed with the vegetables.
  5. Pour in the reserved mushroom soaking liquid and an additional cup of water. Stir well and bring the mixture to a boil.
  6. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15-20 minutes until the rice is cooked and the liquid is absorbed.
  7. Remove from heat and let the rice sit, covered, for an additional 5 minutes. Fluff the rice with a fork and garnish with sliced green onions before serving.
