- Onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Coconut milk - 200 ml
- Vegetable broth - 400 ml
- Olive oil - 1 tablespoon
- Fresh thyme - 1 teaspoon, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
Steps
- Heat the olive oil in a pot over medium heat. Add the chopped onion, carrot, and celery, sautéing until the vegetables are softened, about 5 minutes.
- Add the minced garlic and chopped cauliflower to the pot, cooking for another 2 minutes until fragrant.
- Pour in the vegetable broth and bring to a simmer. Cover and cook for 10 minutes, or until the cauliflower is tender.
- Stir in the coconut milk, fresh thyme, salt, and black pepper, then add the haddock fillets. Cook for an additional 5-7 minutes until the fish is opaque and flakes easily.
- Remove from heat and stir in the lemon juice before serving. Adjust seasoning to taste.
