  • Cauliflower - 200 grams, chopped

  • Celery - 1 stalk, diced
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Coconut milk - 200 ml
  • Vegetable broth - 400 ml
  • Olive oil - 1 tablespoon
  • Fresh thyme - 1 teaspoon, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. Heat the olive oil in a pot over medium heat. Add the chopped onion, carrot, and celery, sautéing until the vegetables are softened, about 5 minutes.
  2. Add the minced garlic and chopped cauliflower to the pot, cooking for another 2 minutes until fragrant.
  3. Pour in the vegetable broth and bring to a simmer. Cover and cook for 10 minutes, or until the cauliflower is tender.
  4. Stir in the coconut milk, fresh thyme, salt, and black pepper, then add the haddock fillets. Cook for an additional 5-7 minutes until the fish is opaque and flakes easily.
