  • Green bell pepper - 1 medium, diced
  • Celery - 1 stalk, diced
  • Garlic - 2 cloves, minced
  • Okra - 200 grams, sliced
  • Canned diced tomatoes - 1 cup
  • Cajun seasoning - 1 tablespoon
  • Bay leaf - 1
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Green onions - 2 tablespoons, chopped for garnish

Steps

  1. In a medium saucepan, heat the olive oil over medium heat. Add the diced onion, green bell pepper, and celery, and sauté until softened, about 5 minutes.
  2. Add the minced garlic and sliced okra to the pan, cooking for another 3-4 minutes until the okra is tender.
  3. Stir in the canned diced tomatoes, Cajun seasoning, bay leaf, salt, and black pepper. Cook for an additional 2 minutes until everything is well combined.
  4. Pour in the vegetable broth and bring the mixture to a simmer.
  5. Once simmering, add the long-grain rice, stir well, and cover the pot with a lid. Reduce the heat to low and let it cook for 20 minutes or until the rice is tender and has absorbed the liquid.
  6. Remove the bay leaf, fluff the rice with a fork, and serve hot, garnished with chopped green onions.
