- Okra - 200 grams, sliced
- Canned diced tomatoes - 1 cup
- Cajun seasoning - 1 tablespoon
- Bay leaf - 1
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Green onions - 2 tablespoons, chopped for garnish
Steps
- In a medium saucepan, heat the olive oil over medium heat. Add the diced onion, green bell pepper, and celery, and sauté until softened, about 5 minutes.
- Add the minced garlic and sliced okra to the pan, cooking for another 3-4 minutes until the okra is tender.
- Stir in the canned diced tomatoes, Cajun seasoning, bay leaf, salt, and black pepper. Cook for an additional 2 minutes until everything is well combined.
- Pour in the vegetable broth and bring the mixture to a simmer.
- Once simmering, add the long-grain rice, stir well, and cover the pot with a lid. Reduce the heat to low and let it cook for 20 minutes or until the rice is tender and has absorbed the liquid.
- Remove the bay leaf, fluff the rice with a fork, and serve hot, garnished with chopped green onions.
