- Olive oil - 2 tablespoons
- Andouille sausage - 100 grams, sliced
- Chicken breast - 150 grams, diced
- Shrimp - 100 grams, peeled and deveined
- Onion - 1 medium, diced
- Celery - 1 stalk, diced
- Green bell pepper - 1 medium, diced
- Garlic - 2 cloves, minced
- Diced tomatoes - 400 grams (1 can)
- Chicken broth - 500 ml
- Okra - 100 grams, sliced
- Bay leaves - 2
- Cajun seasoning - 1 tablespoon
- Thyme - 1 teaspoon, dried
- Salt - to taste
- Black pepper - to taste
- Cilantro - for garnish, chopped
Steps
- Heat the olive oil in a large pot over medium heat. Add the sliced Andouille sausage and cook for about 5 minutes until browned.
- Add the diced chicken breast to the pot and cook until no longer pink, about 5-7 minutes.
- Stir in the onion, celery, and green bell pepper. Cook for another 5 minutes until the vegetables soften.
- Add the minced garlic and cook for 1 minute until fragrant.
- Stir in the diced tomatoes, chicken broth, sliced okra, bay leaves, Cajun seasoning, thyme, salt, and black pepper.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes, stirring occasionally.
- Add the shrimp and cook for an additional 5 minutes until they turn pink and opaque.
- Remove the bay leaves and adjust seasoning if needed.
- Serve hot, garnished with chopped cilantro.
