  • Olive oil - 2 tablespoons
  • Andouille sausage - 100 grams, sliced
  • Chicken breast - 150 grams, diced
  • Shrimp - 100 grams, peeled and deveined
  • Onion - 1 medium, diced
  • Celery - 1 stalk, diced
  • Green bell pepper - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Diced tomatoes - 400 grams (1 can)
  • Chicken broth - 500 ml
  • Okra - 100 grams, sliced
  • Bay leaves - 2
  • Cajun seasoning - 1 tablespoon
  • Thyme - 1 teaspoon, dried
  • Salt - to taste
  • Black pepper - to taste
  • Cilantro - for garnish, chopped

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the sliced Andouille sausage and cook for about 5 minutes until browned.
  2. Add the diced chicken breast to the pot and cook until no longer pink, about 5-7 minutes.
  3. Stir in the onion, celery, and green bell pepper. Cook for another 5 minutes until the vegetables soften.
  4. Add the minced garlic and cook for 1 minute until fragrant.
  5. Stir in the diced tomatoes, chicken broth, sliced okra, bay leaves, Cajun seasoning, thyme, salt, and black pepper.
  6. Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes, stirring occasionally.
  7. Add the shrimp and cook for an additional 5 minutes until they turn pink and opaque.
  8. Remove the bay leaves and adjust seasoning if needed.
  9. Serve hot, garnished with chopped cilantro.
