Ingredients

  • 2 ripe avocados
  • 1 small lime (juiced)
  • 1 small tomato (diced)
  • 1/4 cup red onion (finely chopped)
  • 1/4 cup fresh cilantro (chopped)
  • 1 jalapeño (seeded and minced)
  • Salt - to taste
  • Pepper - to taste
  • 4 corn tortillas
  • 1 tablespoon olive oil

Steps

  1. Preheat the oven to 180°C (350°F) for the tortilla chips.
  2. In a mixing bowl, cut the avocados in half, remove the pit, and scoop the flesh into the bowl.
  3. Mash the avocados with a fork until smooth but still slightly chunky.
  4. Add the lime juice, diced tomato, chopped red onion, chopped cilantro, minced jalapeño, salt, and pepper to the mashed avocados. Mix until well combined.
  5. For the tortilla chips, cut each corn tortilla into 6 wedges and place them on a baking sheet.
  6. Drizzle the tortilla wedges with olive oil and toss to coat evenly.
  7. Bake the tortilla wedges in the preheated oven for 10-12 minutes, or until golden brown and crispy, flipping halfway through.
  8. Serve the guacamole in a bowl alongside the warm tortilla chips.
