- 2 ripe avocados
- 1 small lime (juiced)
- 1 small tomato (diced)
- 1/4 cup red onion (finely chopped)
- 1/4 cup fresh cilantro (chopped)
- 1 jalapeño (seeded and minced)
- Salt - to taste
- Pepper - to taste
- 4 corn tortillas
- 1 tablespoon olive oil
Steps
- Preheat the oven to 180°C (350°F) for the tortilla chips.
- In a mixing bowl, cut the avocados in half, remove the pit, and scoop the flesh into the bowl.
- Mash the avocados with a fork until smooth but still slightly chunky.
- Add the lime juice, diced tomato, chopped red onion, chopped cilantro, minced jalapeño, salt, and pepper to the mashed avocados. Mix until well combined.
- For the tortilla chips, cut each corn tortilla into 6 wedges and place them on a baking sheet.
- Drizzle the tortilla wedges with olive oil and toss to coat evenly.
- Bake the tortilla wedges in the preheated oven for 10-12 minutes, or until golden brown and crispy, flipping halfway through.
