Steps

  1. Preheat the oven to 200°C (400°F).
  2. Peel the plantains and slice them thinly (about 1/8 inch thick) on a diagonal.
  3. In a bowl, toss the sliced plantains with olive oil, paprika, and a pinch of salt until evenly coated.
  4. Arrange the plantain slices in a single layer on a baking sheet lined with parchment paper.
  5. Bake in the preheated oven for 15-20 minutes, flipping halfway through, until golden and crispy.
  6. While the plantains are baking, prepare the guacamole: Cut the ripe avocado in half, remove the pit, and scoop the flesh into a mixing bowl.
