Ingredients
- ripe avocado - 1
- lime - 1
- cilantro - 2 tablespoons, chopped
- jalapeño - 1 tablespoon, minced (optional)
- salt - 1/4 teaspoon
- black pepper - 1/4 teaspoon
- plantains - 2
- olive oil - 2 tablespoons
- paprika - 1/2 teaspoon
Steps
- Preheat the oven to 200°C (400°F).
- Peel the plantains and slice them thinly (about 1/8 inch thick) on a diagonal.
- In a bowl, toss the sliced plantains with olive oil, paprika, and a pinch of salt until evenly coated.
- Arrange the plantain slices in a single layer on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 15-20 minutes, flipping halfway through, until golden and crispy.
- While the plantains are baking, prepare the guacamole: Cut the ripe avocado in half, remove the pit, and scoop the flesh into a mixing bowl.
- Add the juice of one lime, chopped cilantro, minced jalapeño (if using), salt, and black pepper to the avocado.
- Mash the mixture with a fork until well combined but still slightly chunky.
- Once the plantain chips are done, remove them from the oven and let them cool slightly before serving them alongside the guacamole.
