Ingredients

  • Grits - 1 cup (240 ml)
  • Water - 2 cups (480 ml)
  • Salt - 1/2 teaspoon
  • Sharp cheddar cheese - 1 cup (120 g), shredded
  • Butter - 2 tablespoons (30 g)
  • Black pepper - to taste
  • Chives - 2 tablespoons, chopped (optional for garnish)

Steps

  1. In a medium saucepan, bring 2 cups of water to a boil and add 1/2 teaspoon of salt.
  2. Gradually whisk in the grits, stirring continuously to prevent lumps.
  3. Reduce the heat to low and cover the saucepan. Cook the grits for about 15-20 minutes, stirring occasionally until thickened.
  4. Once the grits are cooked, remove from heat and stir in 2 tablespoons of butter and 1 cup of shredded sharp cheddar cheese until melted and creamy.
  5. Season with black pepper to taste.
  6. Serve hot, garnished with chopped chives if desired.
