- Zucchini - 200 grams
- Bell peppers (red and yellow) - 150 grams
- Cherry tomatoes - 100 grams
- Red onion - 100 grams
- Olive oil - 2 tablespoons
- Garlic powder - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley (for garnish) - 1 tablespoon
Steps
- Preheat the grill to medium-high heat.
- While the grill is heating, wash and cut the zucchini into thick slices, the bell peppers into 2-inch pieces, and the red onion into wedges.
- In a large bowl, combine the zucchini, bell peppers, cherry tomatoes, and red onion.
- Drizzle the olive oil over the vegetables, and sprinkle with garlic powder, smoked paprika, salt, and black pepper. Toss until all the vegetables are evenly coated.
