Ingredients

  • Zucchini - 200 grams
  • Bell peppers (red and yellow) - 150 grams
  • Cherry tomatoes - 100 grams
  • Red onion - 100 grams
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley (for garnish) - 1 tablespoon

Steps

  1. Preheat the grill to medium-high heat.
  2. While the grill is heating, wash and cut the zucchini into thick slices, the bell peppers into 2-inch pieces, and the red onion into wedges.
  3. In a large bowl, combine the zucchini, bell peppers, cherry tomatoes, and red onion.
  4. Drizzle the olive oil over the vegetables, and sprinkle with garlic powder, smoked paprika, salt, and black pepper. Toss until all the vegetables are evenly coated.
