Ingredients

  • Zucchini - 100 grams
  • Red bell pepper - 1 medium
  • Yellow bell pepper - 1 medium
  • Red onion - 1 small
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Balsamic vinegar - 1 tablespoon
  • Fresh basil leaves - 10 grams
  • Mozzarella cheese - 100 grams
  • Ciabatta bread - 2 rolls

Steps

  1. Preheat the grill or a grill pan over medium-high heat.
  2. Slice the zucchini, red bell pepper, yellow bell pepper, and red onion into thin strips.
  3. In a bowl, toss the sliced vegetables with olive oil, salt, black pepper, and balsamic vinegar until evenly coated.
  4. Grill the vegetables for about 8-10 minutes, turning occasionally, until they are tender and have nice grill marks.
  5. While the vegetables are grilling, slice the ciabatta rolls in half and place a layer of mozzarella cheese on the bottom half of each roll.
  6. Once the vegetables are done, layer them on top of the cheese, and add fresh basil leaves.
  7. Top with the other half of the ciabatta roll to complete the sandwich.
  8. Grill the assembled panini on the grill or in a panini press for about 5 minutes, or until the bread is crispy and the cheese is melted.
  9. Remove from the grill, cut in half, and serve immediately.
