- Balsamic vinegar - 1 tablespoon
- Fresh basil leaves - 10 grams
- Mozzarella cheese - 100 grams
- Ciabatta bread - 2 rolls
Steps
- Preheat the grill or a grill pan over medium-high heat.
- Slice the zucchini, red bell pepper, yellow bell pepper, and red onion into thin strips.
- In a bowl, toss the sliced vegetables with olive oil, salt, black pepper, and balsamic vinegar until evenly coated.
- Grill the vegetables for about 8-10 minutes, turning occasionally, until they are tender and have nice grill marks.
- While the vegetables are grilling, slice the ciabatta rolls in half and place a layer of mozzarella cheese on the bottom half of each roll.
- Once the vegetables are done, layer them on top of the cheese, and add fresh basil leaves.
- Top with the other half of the ciabatta roll to complete the sandwich.
- Grill the assembled panini on the grill or in a panini press for about 5 minutes, or until the bread is crispy and the cheese is melted.
- Remove from the grill, cut in half, and serve immediately.
