Ingredients

  • Quinoa - 1 cup
  • Vegetable broth - 2 cups
  • Zucchini - 1 medium, sliced
  • Red bell pepper - 1 medium, sliced
  • Yellow bell pepper - 1 medium, sliced
  • Red onion - 1 small, sliced
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Whole grain tortillas - 2 large
  • Fresh spinach - 1 cup
  • Hummus - 1/4 cup
  • Feta cheese - 50 grams, crumbled (optional)

Steps

  1. Rinse the quinoa under cold water and then combine it with the vegetable broth in a medium pot. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until the quinoa is fluffy and the broth is absorbed.
  2. While the quinoa is cooking, preheat your grill or grill pan over medium heat.
  3. In a large bowl, toss the sliced zucchini, red bell pepper, yellow bell pepper, and red onion with olive oil, garlic powder, paprika, salt, and black pepper until evenly coated.
  4. Grill the vegetables for about 5-7 minutes, turning occasionally, until they are tender and have nice grill marks.
  5. Once the quinoa is cooked, fluff it with a fork and set it aside.
  6. Lay the whole grain tortillas flat and spread 2 tablespoons of hummus on each one.
  7. Top the hummus with a generous portion of quinoa, grilled vegetables, fresh spinach, and crumbled feta cheese if using.
  8. Wrap the tortillas tightly, folding in the sides as you roll them up. Slice in half and serve immediately.
