- Vegetable broth - 2 cups
- Zucchini - 1 medium, sliced
- Red bell pepper - 1 medium, sliced
- Yellow bell pepper - 1 medium, sliced
- Red onion - 1 small, sliced
- Olive oil - 2 tablespoons
- Garlic powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/2 teaspoon
- Whole grain tortillas - 2 large
- Fresh spinach - 1 cup
- Hummus - 1/4 cup
- Feta cheese - 50 grams, crumbled (optional)
Steps
- Rinse the quinoa under cold water and then combine it with the vegetable broth in a medium pot. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until the quinoa is fluffy and the broth is absorbed.
- While the quinoa is cooking, preheat your grill or grill pan over medium heat.
- In a large bowl, toss the sliced zucchini, red bell pepper, yellow bell pepper, and red onion with olive oil, garlic powder, paprika, salt, and black pepper until evenly coated.
- Grill the vegetables for about 5-7 minutes, turning occasionally, until they are tender and have nice grill marks.
- Once the quinoa is cooked, fluff it with a fork and set it aside.
- Lay the whole grain tortillas flat and spread 2 tablespoons of hummus on each one.
- Top the hummus with a generous portion of quinoa, grilled vegetables, fresh spinach, and crumbled feta cheese if using.
