  • Whole wheat wraps - 2
  • Cooked lentils - 1 cup
  • Red bell pepper - 1 (sliced)
  • Zucchini - 1 (sliced)
  • Yellow squash - 1 (sliced)
  • Red onion - 1 (sliced)
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Hummus - 1/2 cup
  • Fresh spinach - 1 cup
  • Feta cheese (optional) - 1/4 cup (crumbled)

Steps

  1. Preheat the grill or a grill pan over medium-high heat.
  2. In a bowl, combine sliced red bell pepper, zucchini, yellow squash, and red onion with olive oil, garlic powder, cumin, salt, and black pepper.
  3. Toss the vegetables until they are well coated with the oil and spices.
