- Garlic powder - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon

- Fresh parsley - 2 tablespoons, chopped

Steps
- Preheat the grill or grill pan over medium-high heat.
- In a bowl, combine the sliced zucchini, red bell pepper, yellow bell pepper, and red onion.
- Drizzle the vegetables with olive oil, garlic powder, cumin, salt, and black pepper. Toss to coat evenly.
