  • Yellow bell pepper - 1, sliced
  • Red onion - 50 grams, sliced
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Feta cheese - 50 grams, crumbled (optional)

Steps

  1. Preheat the grill or grill pan over medium-high heat.
  2. In a bowl, combine the sliced zucchini, red bell pepper, yellow bell pepper, and red onion.
  3. Drizzle the vegetables with olive oil, garlic powder, cumin, salt, and black pepper. Toss to coat evenly.
