Ingredients

  • 1 cup green or brown lentils - 200 grams
  • 2 cups water - 500 ml
  • 1 medium zucchini - 150 grams
  • 1 red bell pepper - 150 grams
  • 1 yellow bell pepper - 150 grams
  • 1 small red onion - 100 grams
  • 1 cup fresh spinach - 30 grams
  • 2 tablespoons olive oil - 30 ml
  • 1 tablespoon balsamic vinegar - 15 ml
  • 1 teaspoon garlic powder - 5 grams
  • Salt to taste
  • Black pepper to taste
  • Fresh basil leaves for garnish - optional

Steps

  1. Rinse the lentils under cold water and place them in a pot with 2 cups of water. Bring to a boil, then reduce heat and simmer for about 20 minutes until tender. Drain and set aside.
  2. While the lentils are cooking, preheat the grill or a grill pan over medium heat.
  3. Cut the zucchini, red bell pepper, and yellow bell pepper into bite-sized pieces. Slice the red onion into thick rings.
  4. In a bowl, toss the vegetables with 1 tablespoon of olive oil, garlic powder, salt, and black pepper.
  5. Grill the vegetables for about 5-7 minutes, turning occasionally, until they are tender and have nice grill marks.
  6. In a large bowl, combine the cooked lentils, grilled vegetables, and fresh spinach.
  7. Drizzle the balsamic vinegar and remaining tablespoon of olive oil over the salad. Toss gently to combine all ingredients.
  8. Serve warm or at room temperature, garnished with fresh basil leaves if desired.
