- 1 cup green or brown lentils - 200 grams
- 2 cups water - 500 ml
- 1 medium zucchini - 150 grams
- 1 red bell pepper - 150 grams
- 1 yellow bell pepper - 150 grams
- 1 small red onion - 100 grams
- 1 cup fresh spinach - 30 grams
- 2 tablespoons olive oil - 30 ml
- 1 tablespoon balsamic vinegar - 15 ml
- 1 teaspoon garlic powder - 5 grams
- Salt to taste
- Black pepper to taste
- Fresh basil leaves for garnish - optional
Steps
- Rinse the lentils under cold water and place them in a pot with 2 cups of water. Bring to a boil, then reduce heat and simmer for about 20 minutes until tender. Drain and set aside.
- While the lentils are cooking, preheat the grill or a grill pan over medium heat.
- Cut the zucchini, red bell pepper, and yellow bell pepper into bite-sized pieces. Slice the red onion into thick rings.
- In a bowl, toss the vegetables with 1 tablespoon of olive oil, garlic powder, salt, and black pepper.
- Grill the vegetables for about 5-7 minutes, turning occasionally, until they are tender and have nice grill marks.
- In a large bowl, combine the cooked lentils, grilled vegetables, and fresh spinach.
- Drizzle the balsamic vinegar and remaining tablespoon of olive oil over the salad. Toss gently to combine all ingredients.
- Serve warm or at room temperature, garnished with fresh basil leaves if desired.
