- Green lentils - 100 grams
- Red bell pepper - 1 medium, diced
- Zucchini - 1 medium, sliced
- Red onion - 1 small, sliced
- Cherry tomatoes - 200 grams, halved
- Olive oil - 2 tablespoons
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Feta cheese - 50 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Rinse the green lentils under cold water and cook them in a pot with 300 ml of water. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until tender.
- While the lentils are cooking, preheat a grill or grill pan over medium-high heat.
- In a mixing bowl, toss the diced red bell pepper, sliced zucchini, sliced red onion, and halved cherry tomatoes with olive oil, dried oregano, salt, and black pepper.
- Once the grill is hot, place the vegetables on the grill and cook for about 5-7 minutes, turning occasionally, until they are charred and tender.
- Drain the cooked lentils and add them to a large bowl. Add the grilled vegetables, crumbled feta cheese, chopped parsley, and lemon juice. Toss gently to combine.
