Ingredients

  • Green lentils - 100 grams
  • Red bell pepper - 1 medium, diced
  • Zucchini - 1 medium, sliced
  • Red onion - 1 small, sliced
  • Cherry tomatoes - 200 grams, halved
  • Olive oil - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Feta cheese - 50 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the green lentils under cold water and cook them in a pot with 300 ml of water. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until tender.
  2. While the lentils are cooking, preheat a grill or grill pan over medium-high heat.
  3. In a mixing bowl, toss the diced red bell pepper, sliced zucchini, sliced red onion, and halved cherry tomatoes with olive oil, dried oregano, salt, and black pepper.
  4. Once the grill is hot, place the vegetables on the grill and cook for about 5-7 minutes, turning occasionally, until they are charred and tender.
  5. Drain the cooked lentils and add them to a large bowl. Add the grilled vegetables, crumbled feta cheese, chopped parsley, and lemon juice. Toss gently to combine.
