- Cherry tomatoes - 1 cup, halved
- Spinach - 2 cups, fresh
- Canned chickpeas - 1 cup, drained and rinsed
- Cooked lentils - 1 cup
- Frozen peas - 1/2 cup
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Garlic - 2 cloves, minced
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cumin - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Preheat the grill or grill pan over medium heat.
- In a large bowl, combine the zucchini, bell pepper, and cherry tomatoes with 1 tablespoon of olive oil, salt, black pepper, and cumin, and toss to coat.
