Ingredients

  • Zucchini - 1 medium, sliced
  • Red bell pepper - 1 medium, chopped
  • Carrot - 1 medium, thinly sliced
  • Red onion - 1 small, sliced
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cooked lentils - 1 cup
  • Canned chickpeas - 1 cup, drained and rinsed
  • Fresh spinach - 2 cups, chopped
  • Frozen peas - 1/2 cup, thawed
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat your grill or grill pan over medium-high heat.
  2. In a bowl, combine the zucchini, red bell pepper, carrot, and red onion. Drizzle with 1 tablespoon of olive oil, and season with salt and black pepper. Toss to coat.
