- Zucchini - 1 medium, sliced
- Red bell pepper - 1 medium, chopped
- Carrot - 1 medium, thinly sliced
- Red onion - 1 small, sliced
- Olive oil - 2 tablespoons

- Black pepper - 1/4 teaspoon
- Cooked lentils - 1 cup
- Canned chickpeas - 1 cup, drained and rinsed
- Fresh spinach - 2 cups, chopped
- Frozen peas - 1/2 cup, thawed
- Lemon juice - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat your grill or grill pan over medium-high heat.
- In a bowl, combine the zucchini, red bell pepper, carrot, and red onion. Drizzle with 1 tablespoon of olive oil, and season with salt and black pepper. Toss to coat.
