  • Red bell pepper - 1 medium, diced
  • Zucchini - 1 medium, sliced
  • Red onion - 1 small, sliced
  • Cherry tomatoes - 150 grams, halved
  • Olive oil - 2 tablespoons
  • Balsamic vinegar - 1 tablespoon
  • Garlic - 1 clove, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Rinse the lentils under cold water and place them in a pot with 300 ml of water. Bring to a boil, then reduce heat and simmer for about 20 minutes or until tender. Drain and set aside.
  2. While the lentils are cooking, preheat a grill or grill pan over medium-high heat.
  3. In a large bowl, toss the diced red bell pepper, sliced zucchini, sliced red onion, and halved cherry tomatoes with 1 tablespoon of olive oil, salt, and black pepper.
  4. Grill the vegetables for about 5-7 minutes, turning occasionally, until they are tender and have nice grill marks.
  5. In a small bowl, whisk together the remaining tablespoon of olive oil, balsamic vinegar, and minced garlic.
  6. In a large mixing bowl, combine the cooked lentils, grilled vegetables, and dressing. Toss gently to combine.
  7. Garnish the salad with chopped fresh parsley before serving.
