- Green lentils - 100 grams
- Red bell pepper - 1 medium, diced
- Zucchini - 1 medium, sliced
- Red onion - 1 small, sliced
- Cherry tomatoes - 150 grams, halved
- Olive oil - 2 tablespoons
- Balsamic vinegar - 1 tablespoon
- Garlic - 1 clove, minced
- Fresh parsley - 2 tablespoons, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Rinse the lentils under cold water and place them in a pot with 300 ml of water. Bring to a boil, then reduce heat and simmer for about 20 minutes or until tender. Drain and set aside.
- While the lentils are cooking, preheat a grill or grill pan over medium-high heat.
- In a large bowl, toss the diced red bell pepper, sliced zucchini, sliced red onion, and halved cherry tomatoes with 1 tablespoon of olive oil, salt, and black pepper.
- Grill the vegetables for about 5-7 minutes, turning occasionally, until they are tender and have nice grill marks.
- In a small bowl, whisk together the remaining tablespoon of olive oil, balsamic vinegar, and minced garlic.
- In a large mixing bowl, combine the cooked lentils, grilled vegetables, and dressing. Toss gently to combine.
- Garnish the salad with chopped fresh parsley before serving.
