- Green lentils - 150 grams
- Zucchini - 1 medium, sliced
- Red bell pepper - 1 medium, chopped
- Yellow bell pepper - 1 medium, chopped
- Red onion - 1 medium, sliced
- Cherry tomatoes - 150 grams, halved
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Dried oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Rinse the lentils under cold water and cook them in a medium saucepan with 500 ml of water. Bring to a boil, then reduce heat and simmer for about 20-25 minutes until tender. Drain any excess water and set aside.
- Preheat the grill or grill pan over medium-high heat. In a large bowl, combine the sliced zucchini, chopped red and yellow bell peppers, sliced red onion, and halved cherry tomatoes.
- Drizzle the vegetables with olive oil, minced garlic, dried oregano, salt, and black pepper. Toss until evenly coated.
- Place the seasoned vegetables on the grill and cook for about 8-10 minutes, turning occasionally, until they are tender and have nice grill marks.
- In a serving bowl, combine the cooked lentils with the grilled vegetables. Drizzle with fresh lemon juice and sprinkle with chopped parsley before serving.
